Spinach Quiche
You will need::
1 deep dish pie crust (frozen)
1-2 Tbs butter
1 small onion chopped, or scallions
1 very small red bell pepper finely chopped
* Use bell pepper as it suits your taste, less is ok
4 large eggs
1 1/2 cups of heavy cream
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 garlic clove chopped
10 ounces of fresh or frozen spinach cut up
* if you use frozen squeeze out all the water
Must be completely dry.
* pinch of nutmeg is optional if you like it.
1 cup of cheese , your choice - suggestions
sharp cheddar, gruyer, parmesan, mozzarella
1/4 cup of a second cheese
To start
Prick holes in your pie crust and bake per instructions
Bake @ 400 until done and slightly golden
Next
In a small skillet, cook the onions, bell pepper, and garlic
until translucent. Do not brown. Set aside.
Whisk together the eggs, heavy cream,
salt, pepper, cayenne, (and nutmeg if you use it)
Add dry spinach and both cheeses, cooked onions and garlic.
Now
Get you cooled pie crust. You can either layer the ingredients with egg mixture on top, or whisk everything together and pour into your prepared crust.
Bake
Bake on a cookie sheet @ 375 degrees for 40 to 55 minutes. Ovens vary. Quiche is done when middle is set and puffed and the crust is golden brown.
Can be reheated in the oven covered with foil. 300 degrees or until center is hot.
Or cooked quiche can be frozen up to 3 months.
